This is the first time I've tried to enter shp files into ACAD Civil 3D. I got everything up and running with the Task Pane. I'm looking at a City's water lines. It'd be great to separate the data by Pipe Diameters and put the 6" lines on a 6" layer/linetype, for instance. I have a Feature Property called PIPE_DIAM. It seems as if I have one big layer for Map Features and I can't figure out how to separate them. Any suggestions?

Taking it you are using the data connect to bring them in to your dwg and NOT the Map Import command.
You can style them based on the Feature Data, Highlight the layer in the display manager of the task pane and click on the Style icon. In the Style Editor, bottom half, click on the NEW Theme text/icon, for property select your pipe_dia field. You can accept the default colors for now and change them later as need.
That will get you started in the right direction.
