there are some tutorials that come with civil 3d. I think there are some that show how to create a basic corridor with assemblies and subassemblies.

as for a book. There is mastering civil 3D available from amazon.com

I'm not sure if there is a spanish translation for the book.

buenas tardes quisiera un poco de ayuda con unos subensambles de civil 3d, me gustaría saber si existe un ensamble de hombro que pueda relacionarse con la superficie para que cambie su pendiente de daylight según si esta en corte o en terraplén

You would want to create this using one of the Conditional assemblies.
Or if you have access to Sub-Assembly composer you could create a specialized assembly to consider the surface slope at the shoulder.
