i would to suggest a course regarding corridor modeling and pipes in civil3D... this would be very nice..

A course on an entire civil project would be nice, too.
Or break it down into 4 logical courses:
Alignments: horizontal and vertical
Pipes: storm, sanitary, water
Grading with cut/fill limits.
Then putting it all together in Plan/Profile sheets.
