help! help! help!
ok, i have searched around and cannot find a solution. so i am hoping that there actually is a solution and i just missed it.
is there any way to see elevation symbols in revit but have them not plot.
turning off the visibility would be a usability nightmare. how will other members of the team know where there already exists an elevation?
please tell me there is another option for this. can i build a family that has a 'defpoints' type of line/text?
any help would be appreciated.

There's no such thing as "defpoints" in Revit. You could set up views with everything visible that would never be printed and would be useful for finding view tags, etc.

If they are unreferenced view tags, when you are plotting, tick the box called "hide unreferenced view tags" in your plot dialog box under 'setup'. This will not print any tags for views that are not on sheets.
