Can a filed be locked so you can not perform a text edit and accidently loose the field by replacing the field with text?

This is a great idea. The idea of fields are great and we're really embracing them. We've taught our office of 100 AutoCAD users about fields, but when they actually get to a project were they're being used, they've forgotten about them. Bringing back fields that people accidentally destroy isn't really a fun activity.
