cut and paste surfaces

Is there a way to cut out a piece of a surface? I know I can then paste two surfaces together. I just need only a little piece of another surface and not the whole thing.

Caution, following theory is untested:

Paste your current surface into a new empty one.
Add a boundary to this new surface to limit it to just the area you need.
Paste this limited surface to the next surface.


I suppose you could also copy the current surface add the boundary and then paste that.
