Does anyone know if you can send dim text to new line (sim to acad's /x)? ALSO I was trying to use the fake dim and couldn't adjust the tick marks. Any suggestions? Thanks.

Dimensions have the capability of displaying a prefix or suffix, but only on the same line.
To fake a dimension in Revit is heresy and therefore not allowed. A popular work-around is to create a dimension style with very small (or white) text, then place opaque text over it.

As stated already, you cant alter dimension value text
But you can add a prefix or suffix, but also note that you can go to additional lines in the prefix or suffix by pressing control+enter in the text dialog

I have been trying to figure out how to drop the suffix to a second line for a long time. I tried your Crtl+Enter trick. It worked in the dialogue box but the actual text just has a square in it. Any thoughts?
