I am trying to find a way to edit the "GFCI" label that shows on the plan view along weith the annotation symbol.

I want to do the following:
1. make the text smaller
2. change the text font
3. set the 'GFCI' label to rotate or rather stay at 0 degrees no matter how it's placed

is there anyway to do any of these things?

My preferance - Do it with a TAG. And remove the GFCI completely from the family.

Yes it does mean you have to tag them all, but this can be covered with 'Tag all untagged'
This method also gives you much more flexibility

Edit the family, then select the annotation symbol and edit that family. You'll be able to do it all there, then load it back into the device family.

Unfortunately you won't get the final part...

"3. set the 'GFCI' label to rotate or rather stay at 0 degrees no matter how it's placed".

And the best way to achieve this is using a 'Tag'

...

Within the embedded "Duplex Annotation", go to "Family Category and Parameters", check "Keep text readable". You can also change or play with the Label family, there.
