The company I work for is meeting with someone who will possibly help us set up our company standards for REVIT MEP (templates, piping systems, families, etc.) What kind of questions should we ask so we are sure we are getting what we want.

"Have you ever used Revit in a production environment?"
I have found that a lot of resellers tend to have a view on Revit which is a bit on conflict with what actually occurs on an actual project. The next problem is a lot of people who do these things learned from Revit Architecture since it has been around longer, furthering the potential distance from your actual needs and their abilities.
Revit MEP is a relatively new program, and the education and support for such is still young. Make sure YOU know what you want and need going into this meeting, because there is a possibility that neither of you will be entirely on board with the needs of a production environment if you don't.
