Anyone know if and how I can deactivate the fact that if I double click on the big R (application button in the top left) after a save or right when I open a project that it CLOSES revit completely? Ugh!

That's a Windows function. Double-click the icon at the top left of any program or window and it will always close the program (same function as Alt-F4 or the X button at the upper right).

To prevent double-clicking you could just use ALT-F and not click it at all.
