Can you edit stair nosing profiles

I downloaded the 2010 stair and railing sample files.

How do you edit a stair nosing profile?
If I select the profile family in the project browser and right click "Edit", many of them greyed out. Some nosing profiles are editable, some aren't. Why?

Not sure what you mean ? When I open the GBRENU_Stairs.rvt file, there´s two stair nosing profiles loaded: Project Browser > Families > Profiles > Stair Nosing - Pan & Stair Nosing - Radius.
Both can be edited, and are "just" regular profiles, which you should be able to edit to whatever you desire...
