IS it possible to create a custom ceiling grid either new or by editing the the existing 2x4 grid?

Sure, the grid is really just a pattern that is assigned to the material your ceiling finish uses. Any pattern you can find or create could be used instead.

If you're motivated to do this to re-orient the grid, you can rotate the pattern by selecting any one piece of the pattern and choosing rotate, then enter or pick the rotation angle.

The grid on a ceiling is simply a surface pattern. You can create a new ceiling type (or modify the existing type) by selecting the ceiling, selecting Properties, selecting Edit/New, Edit the Structure of the ceiling and set the Material of the bottom layer of the ceiling to a material with your desired pattern.
