I have recently purchased the Revit Content 'All in One Bi-Fold and Sliding Door' Family. Does anyone know how to make a simple sliding door from it - without having pockets in the walls?

I'm not familiar with the package so I don't know if there are options for that. I'd suggest you contact the folks you bought it from.
I use online content only to reverse engineer it from scratch. See how they laid the thing out and make your own with only the features you need.
I wanted a sliding door, so I saved off a regular door, deleted the panel, drafted in a sliding panel, and gave it the width parameter for the previous panel. Works a treat.
Are you talking about a sliding door hanging off a wall or one that is embedded in the wall?
I was talking about a regular domestic style surface mounted sliding door.
I think there's a couple of those types on Revitcity.com. Their website is down at the moment but should be up in the next few days.
