When I assign a material to all selected objects, it only holds on the objects in that one view port. When I switch view ports it reverts back to the default colors. How can I fix this? Thanks.

If you meant viewpoints as opposed to viewports, it could be that your viewpoints are all set with render style set to "shaded", then when you add a material the display automatically sets render style to "full render" so you see the materials as applied, but then when you switch to another saved viewpoint with render style set to "shaded" the materials will seem to disappear. Even going back to the first viewpoint where materials were displayed will not show the materials if the viewpoint's render style is saved as "shaded". You need to change the render style to "full render" and update the viewpoint with this setting.
Ah! I see. Next question. Is there a way to set up a template to be used when I generate viewpoints from the Report tab? Thank you.
Also, how can I save a viewpoint rendering option. When I switch views and return, the rendering is set back to shaded.
Sorry can't help with the first question regarding reports, but saving the rendering option is as simple as updating the viewpoint i.e. right click the viewpoint and select update to save current settings. You set the rendering style mode from the Viewpoint Ribbon Tab.
