Does anyone know how to get rid of the quick access toolbar & the autodesk exchange toolbar. I did a custom cui which I shared with some coworkers but some of them do not want the quick access toolbar but I do not know how to get rid of it

I don't believe there's a way to do that.
Just to check, I attempted going into the CUI (AutoCAD MEP 2013), but, it does not allow the removal of those components.

Click the "Customize Workspace" button, then expand "Quick Access Toolbars" on the left and uncheck whichever on is checked. Then click "Done", "Apply" & "Save".
There's a Search for AutoCAD help, Autodesk 360, a button for Autodesk Exchange, Product Updates and a Help dropdown in the upper right. Is that what you're talking about? I can't imagine taking them out.
To be honest I couldn't imagine working without my custom "Quick Access Toolbar". I've added buttons to toggle Civil Toolspace, the Map Task Pane, and the Layer List Combo Box. Anything you want constant access to no matter what Ribbon Tab is active can be put there.
Perhaps the better solution is a quick tutorial or training on the benefit of the QAT... I do little email blasts about features and office standards issues periodically. I included screen shots and animations when practical and possible. A group of users are much more likely to adopt or something "new" if they understand that it benefits them.
For the Exchange/360 crud, look for tips on removing Communication Center. Owen at Manusoft has a handy MSI for eliminating it.

Thanks everyone for your suggestions. what has happened is I did a custom cui on my workstation that I wanted to share with everyone. I like the quick access toolbar but I had a user that absolutely hates it. He swears that with the cui that he was using before both of those toolbars were not there. I was able to remove the quick access toolbar but I have not gotten around to the exchange tool bar yet.

This (disabling InfoCenter) can also be done via LISP as I demonstrate in this post... Obviously not as amazing as Owen's fine work. Just saying.
