In AutoCAD 2014, HP Designjet T2300 prints vertical instead of horizontal prints??? I have a feeling there are a number of issues and I am not sure a "conference room" such as this will be able to help, but, we'll see.

Running 2014 a t2300 here, no problems.
Check the Advanced options for that plotter, On Paper/quality tab you can check the box for "Show Preview before printing"
on the Features tabm looks at the Autorotate option.
Also keep in mind that a shared printer's property settings, are not the same as the shared printer's defaults.
If your IT admin addressed the former, and not the latter, anyone who connects to the shared printer will be configured using the defaults - not the shared printer's properties - this is where distributing the printer via Group Policy might come in handy, as it assures that your users will get any changes at next restart (if GP per machine), or next log off/on (if GP per user).
