Does anyone have any experience with either the HP T2500 or the Canon imagePROGRAF iPF785 MFP M40?
We are looking at replacing our old HP500 and Oce copier.

I looked at both of those last year, in addition to a few Oce devices, when considering replacement options for our outdated KIP3500.
I ended up finding it less costly to bundle a standalone large-format scanner (Contex SD 3600), and standalone plotter (HP Designjet T7100), YMMV.

I reviewed the T2300 for Cadalyst about 4 years ago, and I was involved in a recent purchase of a T2500 about 3 months ago.
The T2500 prints and scans well, but without knowing your volume requirements, it's hard to say one way or the other whether or not if will fulfill your needs. We used to have a Designjet 500 also, and of course the T2500 is light years ahead of the DJ500.

I guess I don't have any specific questions. I was looking for reviews of both machines I listed but could not find any. How important is having a Postscript machine? I have heard 2 different stories about whether I need it or not.
Having a T2300 here, it's pretty good for low / moderate volume, and with glossy photo paper banners and posters can really 'pop'.
Paper handling on the other hand.... finished plots dump out curled up in the cloth catcher. If you've got a set to plot out, plan on babysitting the dang thing.
PS: That seems to be the best way to print full-size PDF prints, otherwise rotating the prints is hit or miss, and a lot of 24x36 PDFs come out 36"x36" squares. Printing PDF to the Postscript queue works better than using the HPGL queue.
The T2500 and T3500 have a 'media output tray' built in.
