1. A. Slope, are talking about modeling actually the 1/4" over a foot slope. IMHO, that is overkill, but if you must, use an in place sweep instead of the gutter tool. B. Gutters, like wall sweeps and reveals will automatically miter when the including in the same "sketch" and the "blue dots" meet. You cannot control the returns the same way you control wall sweeps.
2. I typically do not model this, as again, I feel its overkill. We just put drafting lines in where needed. However, we do model ridge caps with a ridge cap family we have. If you really want to, you could create such a valley family by using a in place sweep, with a angled profile, using the valley line as the 3d path.
3. Use the roof soffit tool of course Under Roof, then roof soffit.
