Where/how may I print out a color-line thickness guide that will show me how my lines will plot?
Are you going to use a plot style (CTB/STB)?
Or are you just going to print things with various AutoCAD assigned lineweights?
For the former, I think you'll have to create some lines, and assign each one of them a color that is mapped to a particular lineweight (CTB).

For CTB printing there's a chroma.dwg saved in C:\Program Files\Autodesk\AutoCAD 2019\Support. That has a SWATCH block set to each colour. You can edit that block to add a line set to ByBlock to show the lineweight as well. This can be printed with various ctb files to show the difference.
CTB.dwg attached should work for any CTB and displays color numbers, plot colors, and lineweights. If you change the CTB plot style and regen it displays the current style in the top left.
