How do I take some bi-fold double doors and edit them to be quad-folding doors?

I don't know if that is possible. I know some have built quad sliding doors, but not quad folding.

You could turn off all the display properties and then add a custom block, its hard work though, as the custom block wont update if you change the door width.

Create a new door style [copy an existing bifold door style or start from scratch, depending upon your needs]. Edit the new style and change the Door Type on the Design Rules tab to Bifold Double. Make any other changes appropriate to your new style, then select OK to accept the changes to the door style. Select your bifold door and change its style to the new style.

Or you could go to the Door Styles (Imperial).dwg or Door Styles (Metric).dwg and grab one of the out-of-the-box Bifold Double door styles. In 2004, there are two types, louvered and non-louvered.

Unless, of course, you want eight total leaves, four on each side, in which case Mr. Sanderson's suggestion may be the way to go.
