Attached is a Ceiling Tag that your looking for. The Ceiling Type and AFF are Labels within the Annotation Family Template.

Be careful. If you lay floor over a floor for finishes (as some do), you're calculation will be from the level the ceiling is based on, thus the actual height between finishes would be off by the additional finishes. The floor finish can be a misnomer. Your question was
As there are so many ways to vary the height of the slab etc, I'd say you'd be in for a real challenge to meet your question. See the attached image. I simply offset the slab from the level by 6 inches. The ceiling heights are defined as the same, as the annotation family is looking for where the ceiling is in relation to the level it is based on in this case not where the floor finish is located.automatically defines the height between the floor finish and the ceiling finish.

Doh! If revit can automatically detect the height of a finish face with the spot elevation tool, why can't it do the same for a ceiling?

Its more how the annotation family is built. Revit knows where it is, its just getting it in the format you want with all the parameters properly defined. Just wanted you to be aware that its really important to understand how some families are built and how they affect the information you are seeking.
