I use Black PS Background, but i some cases i change to gray, when i work with some dwg because the colors of lines.

Using a mid grey at the moment.
It has the advantage of contrasting with model space enough so no silly mistakes can be made and still being able to view the yellow line work and reduce eye strain.
For me...it's gotta be black.
Easiest on the eyes and works best with our line colors, and it mimics what the work looks like in model space (which is set to black too).

Usually mid-grey but currently one of the darker greys - 251.
is there an "off black" color?

Because of our plot standard, I mostly use white with "Display plot styles" set. Those settings make it easy for me to assure all Plot Styles have been correctly assigned to each layer.
White, just because that's the way it comes out of the box. We don't do extensive work in ps, just insert a title block, a block with attributes for the sheet number and title, and add one or more viewports.

Black with white crosshairs at 5%.
I change my UCSICON properties so the icon is white in PS. The blue just doesn't work well with a black background.
