My interior elevation tags have a sheet number but not the actual view number for where it is located on the title border itself.

I am looking for the correct one but I can't seem to find a family for Elevation

I have:

Section Head
Spot Elevation
View Titles
and more

but nothing for elevations that I can find. What symbol does the elevation tag use?

thanks

Settings > View Tags > Elevation Tags > Text Position to Outside Center...

That gives me what I need, Thanks

Now to be picky... Where can I find that tag family so that I can change the way that it looks. I would like to put a line in the center with the sheet number above the line and the view number below the line.

Thanks

You can't.
The elevation tags was not updated for Rel. 6, Rel. 7, Rel, 8, 2009 or 2010.
It has been on the wishlist for what is closing in on a decade.

Can you not bring in an old family from Rev 5 and update the family to current? If, of course you can find an old family, Maybe from an old project or something?

The elevation tag is a built-in object. It cannot be edited beyong what the dialog offers.
Sure you can bring an older family over - but it is the same in ALL versions of Revit.
