Is there a way to select everything in a model all at once _turn off, hidden, detail lines, etc?
i'm not sure i understand what it is that you're trying to do, but you could use view templates to control the visibility graphic overrides to turn off these items...just be careful to set up separate view templates for each view type (floor plan, demo plan, rcp, etc.)

MMILES, not all at once there isnt. because you would have to get in to every view (activated), ever 3D view, with every phase, etc.
You can do it painstakingly, but there is usually a better way. What are you trying to do, relocate an entire model and views? Or rotate it? Or mirror it?

I was trying to select everything in database to rotate the project. My true north is actually up and down on page, and until now we never thought about project north or true north. Our house has been modeled based on true north - leaving us with many arbitrary angles and what not...so I was going to just rotate the whole thing, and then reestablish true north.
anyway, I discovered rotate project north (never seen this command until today), so we were able to rotate our project. Unfortunately, due to cram sessions, and other craziness there are detail items all over the place, and most of those did not rotate so we had to find, move and rotate all those.
