I recently enabled worksets and created a central file, etc.
Now, revit is not saving the files .001, .002, .003 etc. and the backup folder that it creates is full of .dat files, but no files appear if trying to use the rollback command.
Does anyone have any insight??

Thats exactly how it is once you enable the worksets.
You need to use the Collaborate - Restore Backup

The way I understand it, the .001, etc backup files are only for non-workset enabled Revit files, and( I believe) .rfa files.
However, if your server keeps shadow copies you can sometimes "go back in time"
and pull up a previous version of the Central File. See if under the Properties
in Windows if you have a Previous Versions tab. Or perhaps a tape or hard-drive
backup as a last resort.
Also, see the attached screenshot from RAC 2010.
Hope this helps.
cheers........

Worth mentioning...Rollback does not create a new central file, it creates new local file based on that state of being. It is necessary to Save As and make a new central file to go forward with the project that Rollback was used for.
