Anyone know if it is possible to have an existing wall display both a solid poche and the hatch patterns of the wall assembly using the display "previous + new" phase filter?

would a custom fill pattern be required?

It would have to be a custom fill pattern, and you wouldnt be able to show the wall layers as if they were on medium or fine level of detail, since it will override the cut pattern of the entire entity of "wall."
