Just installed Revit A 2010 on W7U. And Revit cannot seem to "Store and display recently opened items in the Start menu and the taskbar". And cannot also store thumbnails in the "Recent Files" inside Revit. Seems like Windows 7 Ultimate doesnt trust revit.
Is there a way to make it work properly with Windows 7?

Just a shot in the dark here but try this. Go to the folder where your projects are stored and see if you have permission to write to this folder. Again just a shot in the dark here as I don't have Windows 7 but I remember reading something along these lines somewhere.

permissions and or ownerships, could be the answer, testing now.
