I would like to change the settings of "project units" to meter and centimeter instead of the millimeter setting in the metric library, so that I do not have everytime I start a new family to adapt the units etc.
But somehow can't open the file, since I can not find it via Revit (no option of opening Family Templates).
Is there any way to do it?

All the template files are in their own folder ( Metric Templates ) in the same directory as the Metric Library. You should be able to navigate there and open them he same as any other file.

GerhardYou can't open a family template files directly, but there is a simple work around. Save a copy of the original file to an other directory in case you need to revert back. Rename the family template extension to an rfa - example: "door.rft" to "door.rfa" then open it as a regular family file and modify the units. Save the file and rename it back to the original extension.
