I am trying to use some bathroom components created by a manufacturer and they appear to be have been created using some sort of Nurb surface, ie., the curves are showing all of the geometry in the bends. Is there a way to turn off that extra geometry so that it appears as it should in floor plan and elevation?

This is a guess but if my assumption is correct, you are probably looking at 3D content imported to a Revit family that may have been originally created in SolidWorks or AutoCAD (perhaps Inventor). This is most certainly not my favorite method but if I am correct, try this.
Open the manufacturer family and select the 3D element. Hide it in all views except 3D views. Next, go to each elevation and plan view and draw symbolic lines (or a combination of symbolic lines with a masking region) representing was you want to see at each detail level. Load this into your project and it should look better.
These families often look OK in 3D if you are creating a rendering. Unfortunately, your 3D views that are not rendered (even if shaded) will look pretty awful. There is nothing I suggest to help with this short of starting from scratch with your own family.
Most important, let the manufacturer know this is a problem. There are a lot of content creators out there (even some who provide consulting and creation services) who do not understand this issue.
