Could anyone tell me how to tag existing windows,
if I want to label them simply as "E" on floor plans?
Is there any way to prevent them from being numbered sequentially?

Try editing the family (s) and give them all a Mark of EX ( or whatever you want the tags to read).
You may be a warning about duplicate marks, etc. but this should keep them
from tagging sequencially.

Doesn't work if you are using the default window tag which is a type mark - not a mark (Wrong field.). Type mark and mark are also not available in the family editor - only in the project.
Just create an existing view 3d or plan depending on job complexity. Select all the windows. Open the properties and put in EX for the type mark. Done.

Aaron is correct--
To clarify, where I mentioned edit the family, I meant edit the Mark in the Properties of the door families while in the project.
