If I have a file with work sharing enabled that I would like to work on from home (with no access to the network where the central and user files are), what is the workflow for that?
If I take my user file or central file then it doesn’t allow me to make changes or even save as because it is a different user..

You have two choices, either remote login to your desktop to work on it from home, but it will act if you are on the network. Otherwise, you'll need to copy the central, making sure no one else works on it until you return and copy the file back onto the network. Remember, that you'll have to saveas and make it a central at home, then again when it is brought back into your office.

Is it possible to take out only a workset and work on it at home, so that the office can continue? Does one have to take home the entire Central?

Not Really. IF there is EXTREME discipline with EVERY user, and you do not TOUCH anything other than that workset, there is an extremely small chance it might work. Chances are, you model will not be able to sync with the central when you take it back. A workset enableed Revit file is, by design an EXTREMELY sensitive item. IT is so to protect you and itself from the possibility that two different people might try to edit some overlapping item, such as lineweights, the same view, etc.
