How do you control the gap distance between a joist and it's support, whether it is a beam or a wall?

The gap between the end point of the joist and it's support?

Can be controlled with the Start and End Extension parameter (in the element properties of the joist) See attached image.

If you're talking about what the gap looks like in 3d, the G_J is right. If you're talking about the cutback distance in a plan view, go to your Structural Settings and there you can modify the plan representation.
