It was my understanding that a curtainwall assembly or individual window can be inserted right into another wall type, cutting the wall. Is this a fact in 7? Or if not the case how do you insert a curtainwall window?

Curtain wall 'windows' are just another type of curtain panel family.

R7 does automatically void a wall when you insert curtain wall. You can also draw one wall type over another and then join geometry to have them splice together properly. Curtain panels can now be filled by using other wall styles as well.
I was toying with the panels at AU and discovered that you can create a curtain wall, define one of the panels as a wall style and then insert a regular window into the wall that's a curtain panel :???:
It's a crazy, and very flexible, world we have here in Revit land.
