Where do I find Revit sample projects? (the ones that used to come with the help tutorials, or any others for that matter)

The older (2010 and 2009) tutorial pages have all of the downloadable datasets still posted.

In 2011 sample files are installed and on the recent file screen when you first start Revit. If those links have slipped off the screen the files themselves can be found in the ...\Program\Samples folder where revit is installed on you PC.
