We are being asked to tag Stacked walls as single individual walls. The problem is that we are only able to tag the wall that the cut plane is set at and tags the wall as the basic wall type at that cutplane. How do we tag it as a Stacked wall?

You can't really tag it as a single wall, but you can drop a little plan region on a segment, and tag the component wall that is crossed at that cut plane. Of course the graphic of the wall also changes at that point.
This is one of the reasons I try to minimize the number of stacked walls after early DD. They are a design convenience, but have less place in DD/CD phases.

Each of the portions of the stack will tag according to their definition. You can see that in sections but in plans, you will not unless you do as gordon suggests.
