We have an office standard where when we are cutting through concrete, we want it to be shaded as well as seeing the conc. hatch pattern. Typically how we do it is to draw a filled region with a transparent grey over the concrete.
It would be nice if we could save this step of filled regions, so is there a way in the wall properties where you can specify 2 patterns to show? Or is there another way to accomplish this?

I do not think that there is a way to do what you want in an easier way.

You probably can't get a completely shaded view. You could combine the AutoCAD Dots pattern and the concrete pattern to start in the diection you want. The Solid Hatch seems to be a hardcoded part of Revit.

If you check the structural forums there are a ton of demands, workarounds and other solutions people have tried to make this happen.
Essentially no you can't I use 2 views overlaid on a sheet, others use filled regions, others use hybrids of both of those. I would check out there for solutions.

I suggest you change your office standard until this funtionality exists. All the workarounds involve time added to your production with little "actual" benefit to your documentation.
When the leaders of your company understand the time it takes to do what you want vs. the benefit graphically I think they'll say stop wasting your time with that and move on.
