I need to find some decent software that will convert a pdf back into dwg. I know there are lots of different programmes out there that will do it but I have no idea where to start. What I would ideally be looking for is one that will take the pdf and return it to its original dwg state, layers, polylines, text etc.
The computer that it will be installed on is running Windows XP 64bit and AutoCAD 2008.

It depends on the content of the PDF. If it contains raster data, then you are dealing with Raster to Vector, which is an inexact science to begin with and I don't know if any of the "Pdf to Dwg" converters even try to do this.
If the content is vector, then most programs will be able to recover the data. But keep in mind that a PDF is just a plot file so the contents will not be as accurate as the original CAD data, you may get layers, but probably will lose blocks, dimstyles, named views, xdata, and coordinate systems not to mention all other non-graphical data.
Also, some PDF files contain a mix of raster and vector. When necessary, we use the routines in Toolpac, which are also available as a standalone. Maybe you can obtain a trial version and check it out for yourself. --> www.dotsoft.com

Try to use Autodwg pdf to dwg converter,you may convert your pdf files back to dwg.

I also need to convert my PDF to DWG or DXF format. I use Adobe Illustrator and AideCAD Converter to export PDF to DWG, the results are very good, but you may need to "re-scale" your drawing in AutoCAD.

Adobe Illustrator (http://www.adobe.com/products/illustrator.html) can save PDF to CAD format.
Any PDF to DWG Converter (http://anydwg.com/pdf-to-dwg.html) and Aide PDF to DXF Converter (http://www.aidecad.com) converts PDF to CAD format in batch mode.
