Does anyone know if it is possible to customize how schedules look on finished sheets? For example, in a long door schedule, can we add bold lines every five rows or so that would make the schedule easier to read? Or is there a way to increase the row height?

You are asking for something that has been an on-going request. At this time there are limited (and I mean limited) display functions within the scheduling tool.
The size of the schedule boxes are a function of the text size. And as for bold lines every 5 lines (or whatever the desired number) does not exist. The most you can do is a bold line around the perimeter. That goes for the current version as well.
I have been tempeted to export a schedule to Excel; make my adjustments and using a screen capture program import the image into Revit. The downside (and this is a big one) is there are any additions, subtractions, or augmentations to the doors in the project you would need to do the export function and re-import again.
This post might qualify as a Wish List item ...

Waning: Ugly workaround approaching
I agree this functionality would be handy for large schedules. In the meantime I have used a legend view with a repeating detail component placed under my schedule view to simulate filled cells. It takes a little work to get the spacing just right but it does the trick.
