If I have a 4-7/8" wall, that is being used as a bulkhead. How do I wrap the gyp around the bottom of the wall. If I go to a 3-D view and assign a material to the finish sides of the wall the bottom does not show that material.

A. Use the paint tool to paint the material on the bulkhead.
B. Add a "ceiling" of gyp. bd. to the bottom of the wall.
The second can look great in section.

good idea. that would allow me to tag the bulkhead witha ceiling height tag. but do i need to do that at every bulkhead or can i incorporate that into a wall type?

Unfortunately the bottom of a wall does not count as an 'end' therefore the wall wrapping options don't work. This is one that's been on the wish list a while.
You'll have to do it on each wall

When detailing this section, I use the "edit cut profile" tool. This tool allows you alter the geometry but only in the current view. It is like filled regions but way more powerful.
