How can I change the material of a mass? what material is a mass anyway?

Assuming you are talking about an in-place mass, while you are editing the mass, tab until you are selecting the whole mass, then you'll see a Material parameter in the properties.

You can also change all your masses to a certain material in the Manage tab > Object Styles. It defaults to "Default Form" as the material.
