I am trying to preload about 60 common wall assemblies into my template. I am interested to know if i can sub categorize these types, by material and use

- Walls
+ Basic Wall
+ Curtain Wall
+ Stacked Wall

I know these subcategories exist. could i have something like this:

- Walls
- Basic Wall
+ Generic Walls
+ Demising Walls
+ Rated Walls
+ Masonry Walls
+ Steel Walls
+ Wood Walls
+ Curtain Wall
+ Stacked Wall

Basic Wall is a System Family. Under that are just the various different wall family types you have defined in the project. I don't know of any way to further separate out different subcategories. What you need to do is just include those items you listed above as prefixes in the wall's Type Name. So the type name might be "Steel Walls - Description" and then all the Steel Walls will be grouped together under Basic Walls.

I know you can add subcategories to Walls in Object Styles, but I don't know what function that really serves.

No way to customize the project browser at the family (unless some of the third party tools do it).
All I can suggest is a good naming convention for your assemblies. A prefix for how you want to categorize them would result in alphanumeric sorting in the project browser. Take a good long look at how you want to approach this because even the short list you've shown could result in potential confusion for the end user. How would you categorize a rated demising wall? What about a wood stud wall that used as a demising wall?
