Demolish Wall Finish?

Has anyone figured out how to demolish a wall finish (siding, tile, gypsum board) of an existing wall?

It would be nice if the demolished finish could display properly in plan, section, and elevation.

The best I've been able to figure out is to make the finish a separate wall right next to the structure and demolish that. you can align lock the faces together and join them so they stay together. I've done this on one project and it worked reasonably well.
