editing color fill schemes

I transferred color settings fill from one project to another. We want to reuse the colors, but change the department names. Apparently, there is no way to edit the text that is the department name. All I can do is delete the entire line and recreate it with the correct text. This requires I make note of the RGB settings and reenter them.

Am I missing something?

No you're not. The only way to change the value is to go back to the parameter and change. Then Revit automatically assign a new color seeing it as a new value.
