What are ways to draw 3d sections? Is it possible to "peel" back materials to show detail?

The easiest way to create a 3D section is using a section box on a 3D view. You can create a section view and, from the view cube, right click and select the 'orient to view' option. Select the section view you created and Revit will apply a section box matching the view depth and extents of that section view. You can then rotate the 3D view to suit.
To peel back layers of assemblies you'll need to use parts.
