Is there the roof equivalent to a location line? I've placed a roof assembly relative to a level, but when I change the finish thickness below the core the entire assembly shifts. So I'm wondering if I can specify that when I place the roof assembly that the static line is the edge of the core rather than the finished surface, ala the wall location line.

Try adjusting the "offset from roof base" and / or the "extend into core" check box, to achieve the relationship you want.
If the roof was constructed with "Extend into wall (to core) unchecked, then the underside of the roof will align with the inside finish edge of the wall, ( with a roof base offset of 0 ).
If the "Extend into wall(to core) is checked, then the roof underside will rest on the inside edge of the structural (core) of the wall. ( A bird's mouth connection )
But, to answer your question, there is no roof equivalent to the wall location line.
