In the Recent Files list, is there a way to change the number of recent files (4 projects / 4 families) to 8/8 or something else?

AFAIK, You can either disable or enable the recent files page at startup ,but I don’t think it’s customizable. (if so it may be a wish list item)

even my revit.ini file does not list 'recent files' like previous posts (2009) did.

You probably want to customize your revit.ini file (http://help.autodesk.com/view/RVT/2016/ENU/?guid=GUID-9ECD669E-81D3-43E5-9970-9FA1C38E8507), there is help to be found on the web about this...

Edit: Sorry, simultaneous messages, I will check my revit.ini...
