In AutoCAD one can define linetypes that incorporate words for services pipelines, fence types etc.
This isn't available in Revit yet is it?

No.
But I guess you could make an autocad drawing with those line types ( sewer, stormwater lines etc ) and link it if you really want to. Probably more trouble than its worth though.

I'm either making them model lines and keynoting them or I'm making them drafting lines and putting a text note against them.
I was just curious.

There is a new tool in 6.0 that allows you to create an array of detail components that you can draw as a line...just like the insulation tool. You could use this as a workaround until they come up with better way.
