My PDF no longer opens up after creation when using AC 2017. I am using the 'DWG to PDF' configuration. I opened up the Custom Properties and have verified that the 'show results in viewer' box is checked, and I can open the PDF from the bubble that pops up in the lower right corner. I still have AC 2016 on my machine and it opens up the PDF after creation.
Any ideas on getting the PDF to open up after plotting in AC 2017?

Not sure if this is your issue or not, but something similar I had to deal with....
Is that the 2016 version broke some DWG to PDF functionality (and 2017 is the same), with the advent, and subsequent hard-coding, of Autodesk's new PDF drivers.
As example:
In 2016 (as with every version since 2009 before it), I use DWG to PDF as the plotter for all of my named Page Setups, which are applied to Layout in all of my templates. However, EXPORTPDF is hard-coded to use one of Autodesk's PDF drivers, and can have a different resultant file size and options/config, than if I instead use DWG to PDF + Autopublish mechanism. In order to make all plot methods yield 'the same' result, I ended up having to apply my desired DWG to PDF settings to all of Autodesk's new PDF PC3 files.
Try making a backup copy of the OOTB PC3 files found under %AppData%\Autodesk\<YourVersion>\enu\Plotters folder, then modify the "AutoCAD PDF * " PC3 files, and see if that doesn't resolve the issue for you.
