Is it better to have multiple wall types where the main core the same and the exterior is different in each type? Or is there a way to have 2 walls back to back, with your main stud wall then another wall that has the exterior materials right next to it? Can windows and doors cut through both walls?

I find it works better to create multiple wall types for each exterior material you need. It is possible to 'join geometry' to make the doors and windows cut through multiple walls, but the only time I use that option is when furring out an interior wall on an existing building (our firm does a lot of adaptive reuse projects).

Using multiple wall types also makes it a lot easier to apply finish materials for rendering and presentation purposes.
