Custom Stair Annotations?

Is there a way to customize the stair path annotation beyond the in-project type properties? I'm trying to get as close as possible to my office's graphic standard, which I attached a picture of.

I need a custom Start Symbol Type and double break lines for overlapping stairs. Is it possible to get that level of customization?
